A cross between Irish soda bread and whole wheat scones, this traditional recipe is quick and easy. There is no added fat, but they’re delicious with a little pat of vegan butter and a drizzle of agave hot out of the oven. We like these with my garlic and kale soup on a chilly night.
Brown Irish Soda Scones (yields 8-10 scones)
Ingredients 1 cup of soymilk 1 tsp apple cider vinegar 2 cups whole wheat flour 1/2 tsp baking soda 1/4 tsp saltMix the soymilk and vinegar and set aside. Sift together dry ingredients, making a little bowl in the center to add the soymilk to. Do not over mix or they get tough and chewy. Turn the dough out on to a lightly floured surface and press out into a 1/2 inch thickness.
Cut out scones with a biscuit cutter or a small drinking glass. Place on an oiled baking sheet. Brush the tops with a little soymilk and bake for 12-15 minutes at 425F.
